Chicken Salad Chick is expanding its presence in Texas with the grand opening of its first restaurant in Midland County on October 2. Located at 200 Spring Park Drive in the Ally Village shopping center, this marks the chain’s 34th restaurant in Texas. The fast-casual concept, known for its Southern-style, made-from-scratch chicken salad, will celebrate the opening with exciting promotions, including a year of free chicken salad for the first 100 guests.

The Midland restaurant is owned by local residents Liz Sevcik and her daughter Alexis Thompson. Together, the mother-daughter duo brings over 30 years of combined experience in nursing and education to their new venture. Both have a passion for fostering relationships within their community, a value that aligns closely with the mission of Chicken Salad Chick to “Spread Joy, Enrich Lives, and Serve Others.”
Grand Opening Events and Promotions
Guests attending the grand opening can take advantage of several exclusive giveaways:
- October 2: The first 100 guests in line will receive free chicken salad for a year.*
- October 3: The first 75 guests who purchase a Chick Meal will receive a free Chicken Salad Chick 40oz tumbler.**
- October 4: The first 50 guests who purchase a Chick Trio will receive a free Chick Cutting Board.**
- October 5: The first 50 guests who purchase a Small Quick Chick will receive a free Small Quick Chick on their next visit.**
With over a dozen flavors of chicken salad, fresh side salads, gourmet soups, sandwiches, and desserts, the menu is designed to cater to a variety of tastes. The Midland location will offer indoor dining, patio seating, take-out, curbside pickup, third-party delivery, and catering options, making it a convenient addition to the community.
A Family Business Rooted in Community
Sevcik and Thompson were inspired to become franchise owners after being drawn to the values and story of Chicken Salad Chick’s founder, Stacy Brown. They are excited to bring fresh, healthy dining options to Midland, especially as it continues to grow as a health-conscious community. Sevcik’s son and Thompson’s brother, Luke Sevick, will serve as the general manager, making it a true family business.
The new restaurant will be the first of three planned locations, with additional openings slated for Odessa and San Angelo.
Giving Back to Midland
As part of Chicken Salad Chick’s commitment to giving back, the Midland location will host pre-opening Friends & Family events to raise money for Gifts of Hope, an organization supporting cancer patients and their families. This aligns with the larger mission of the CSC Foundation, which supports causes like CURE Childhood Cancer and local food banks.
The Midland restaurant will operate Monday to Saturday from 10 a.m. to 8 p.m.
*Guests should arrive early to secure a place in line. The first 100 guests must remain in line and download the Chicken Salad Chick app. Wi-Fi will not be available on site. Once the restaurant opens, guests will make a purchase of “The Chick” or anything of equal/greater value and enter a code in the Chicken Salad Chick app to officially secure their spot. If you leave the line for any reason, your spot will be awarded to the next guest in line. Guests will receive their first free Large Quick Chick electronically to their app the Monday following Grand Opening Day. The reward will be valid for redemption for 30 days upon delivery.
